Fat or hot oil catches fire while cooking

Never throw water on a fat/oil fire - smother the flames with a damp cloth or similar, and call the fire department straight away.

Gas cooker burner fails to ignite

Press the adjusting knob in and turn it to the ignition position, then keep it pressed while quickly pressing the igniter a few times. Once it catches, hold the knob in for a further 5 seconds so the safety thermocouple heats up, then let go and set your preferred flame size. If it doesn't light, just repeat the process.
